Maria's Delicious Healthy Salad

Whilst I was staying with Floor in Amsterdam I decided to put on my master-chef hat and make dinner for us. This was definitely a spur of the moment recipe that had never been tried before that very day. My primary goal for this dinner was it to be a healthy yet delicious meal. So whilst I was at the grocery shop I gathered all my favorite vegetables, beans and cheese. Then decided to put them all together in a bowl and input a new meal into the world! Behold Maria's Delicious Hearty Salad:


This recipe serves two people generously so you can always go back to having some seconds knowing that it's all healthy food that will do you good. 

You'll need: 
1 tin of kidney beans
1 tin of chickpeas
200 grams of light mozzarella 
1 tomato
1 batch of fresh broccoli 

To start boil a large amount of water for the broccoli to be cooked in. Meanwhile the water is starting to boil, lightly rinse the broccoli and start chopping it finely into small pieces. 



Then place the broccoli into the bowling water for it to be cooked. Set a timer for around six to seven minutes depending on how much you want it to be cooked. 


Whilst the broccoli is being cooked, finely chop the tomato and mozzarella into small pieces and set to one side. Open both the chickpea and kidney bean cans and drain the liquid.  




After the seven minutes have passed, drain the broccoli and place in a saucepan. Add the remaining ingredients together in the saucepan and mix them all together.


According to your own personal preference add any sauce you desire! I went for a pinch of soya sauce to give my lovely salad a bit of flavor and Floor went for her favorite balsamic vinegar dressing adding a bit of salt and pepper - classic. 



Et voila! Here's a deliciously healthy salad that has a little twist that was definitely enjoyed without feeling a tiny bit guilty! How could you pass up on such an opportunity? Perfect for these coming summer days.
